No Bake Oatmeal Nut Butter Balls

I am addicted to these tasty little balls of high protein, high fiber, high calorie (boo!) nutty chocolaty goodness. I found the recipe on another blog I read, and since they reminded me of something my mom always makes that I super love, I wanted to give them a try. I followed the recipe but wanted to add some chocolate chips to the mix- just because I love chocolate- and it worked out well! These keep great for several days in the fridge and are surprisingly filling for something so small.


Ingredients:

  • 1 cup old fashioned oats
  • 1/2 cup ground flaxseed
  • 1 tablespoon chia seeds
  • 1/4 cup creamy peanut butter
  • 1/4 cup creamy almond butter
  • 1/2 teaspoon cinnamon
  • 3 tablespoons honey
  • Handful dark or semi-sweet chocolate chips (yes, dark is healthier!)
Directions:
  1. Combine the ingredients in a bowl, stir until completely combined
  2. Roll into balls and refrigerate for ~1hr
***This recipe makes 12-14 balls
